When it comes to cooking on weeknights, I have a hard time finding motivation for anything except what can be cooked or roasted in the oven. We do eat healthy most evenings, its just not terribly inspired. But this is one of my favourite go-to salads for the summer, its bright, fun, and full of flavour. And best of all, if you make a big batch of it, it tastes even better as leftovers as the tomato continue to marinate in the vinegar!
Easy Summer Tomato Salad
2 cups assorted cherry tomatoes, halved
3 tbsp extra virgin olive oil
1 tbsp apple cider vinegar
fresh basil, chopped
salt & pepper
In a medium sized bowl, mix all ingredients together well. For the best flavour, refrigerate for at least thirty minutes to allow the salad to marinate. Top with more fresh basil. Enjoy!
Serves 4 (as side dish)
